As has already been stated, it's because the emissions standards and consumption figures are based on the default state, and being able to adjust the default state would render Porsche in violation of the rules.
Yes that's as we speculated on the Taycan forum quite some time (years) ago but nothing definitive from Porsche that I've ever seen.

Personally, it's a lame excuse given no one has ever actually achieved WLTP figures and so hard to see the rationale. Emissions I believe are zero - its an EV, right? Consumption is impaired by so many factors which further makes a nonsense out of the speculated reason.

Porsche are just complying with the rules of the WLTP and EPA. Whether it makes any sense or not is neither here nor there. And having to do the test in the default driving mode is absolutely the reason your car doesn't start in "Sport" mode, and that you can't turn off the engine "stop/start" on ICE cars by default. Whether you think it's "speculation" is up to you, but it's the reason.

Even more stupid on our iX which defaults to a drive setting other than “Efficient.” So when we get into it, among several other minor annoyances that also take less than 15 seconds to adjust each time, we change the drive mode to efficient the 95% of the time we are not spirited driving on back roads. Would it make sense for every electric car to default into its most efficient, longest range mode?

I haven't got my car yet, so I can't test this, but I hope Porsche is using "soft latching" to at least remember the drive mode for up to 4 hours after the car is turned off, which is allowed by EPA guidance.
Tried it on the way home, unfortunately the car doesn't do this and always reverts to NORMAL.

Saving a non-standard drive mode probably violates a regulatory standard related to consumption and/or emissions.
this is correct -teh vehicle _MUST_ start in the mode that meets normal/defined regulations so that be default the car is in it's "tested/approved" mode/configuration - the owner/driver is allowed to deviate from baseline settings (with approval and disclosure) but it has to be a manual process and can not be "automatic"…

you can thank what ever regional legislatures have brought us to this point…because local regulation are now being world wide because there is a limit to how much regional adaptation one manufacturer can afford to engineer/ship…

thank you to all over zealous regulators for making my Macan slightly less better than it could be.
