Does anyone know if adjusting your build/spec’s delays delivery once the SA has submitted your order or can I change it all I want until the freeze date?
You can change it as many times as you want until freeze date, that won’t impact your build (unless you choose an option that is unavailable - but your SA should let you know if that’s the case).

Go crazy!

It might change your timeline. For example, when I ordered my Macan, thermal/noise glass option would delay freeze by a few weeks. Without this option, the freeze was in two days.

Interesting. Aside from thermal glass, are there any other known parts significantly delaying delivery expectations?

... hoping ICE Macan wheels fit.
Unfortunately, they don't ... I had hoped for the same, to avoid the cost of buying another set of winter wheels/tyres that I have for my ICE Turbo. Looks like my IG EV turbo will be arriving mid-Feb - great to read all the positive reviews, and note a few recurring software glitches that will hopefully get swept up in an early OTA update. Biggest issue seems to the poor image quality in the park-assist cameras, but that presumably is an h/w issue

Yeah I wouldn't hold my breath for that, unfortunately. The ICE Macan had a pretty bad parking camera, and this one is not much better, despite the addition of the 360º views (which were a paid option in the ICE Macan).

Compared to the other systems that I've liked (Volvo, Tesla before they added the "reconstructed" 3D mode), the main issues of the Porsche cameras are 1/ the hardware sucks, a lot of the details are lost, especially in low-light conditions, and 2/ the screen and cameras layout are too small: you get a postcard stamp image of your car from above, good luck trying to detect obstacles.

I thought the automated park assist would be nice, but as I feared it's too limited to be really valuable. You need to drive way past the spot for the system to detect it (which means asking the cars behind you to back up in a busy street), and even then, it often fails. The most frustrating case is when it detects a spot sideways of the actual spot. You really thought the most logical would be for me to park 90º of all the other cars and block the entire street?
